Jimmy Mauric is the longtime brewmaster, operational leader, and legacy face of Shiner Beer. Retiring in 2024 as Brewmaster Emeritus after an impressive 46-year career at the historic K. Spoetzl Brewery in Shiner, Texas, Mauric’s tenure bridges the gap between old-world craftsmanship and modern industrial scale. He is not just a master brewer; he understands the operational mechanics of manufacturing at scale. On Y’all Street, we recognize Mauric as a quintessential example of Texas grit—a leader who started at the bottom of the ladder washing bottles by hand, rebuilt heavy machinery in the Texas heat, and ultimately guided a struggling 39,000-case regional brewery to a 500,000-barrel national powerhouse.

From Bottle Washer to Brewmaster

Mauric’s career began in 1978, right out of high school in the town of Shiner (population: 2,000). At 17, his first job was manually feeding returnable glass bottles into a washing machine for $1.60 an hour. Throughout the 1980s, the brewery struggled financially, surviving on razor-thin margins. To keep the operation running, Mauric served as a mechanical utility man under then-Brewmaster John Huebner. He traveled the country dismantling and salvaging large, used industrial equipment—such as a 40-foot pasteurizer from St. Louis—and manually rebuilding the hydraulics to integrate them into the Shiner production line.

The major pivot for the company—and Mauric’s career—arrived in 1989 when Carlos Alvarez, the distributor famous for introducing Corona to the U.S., purchased the Spoetzl Brewery. Alvarez injected much-needed capital, upgrading the facility from “bailing wire” repairs to state-of-the-art automation. Recognizing Mauric’s relentless work ethic, the company sent him to the prestigious Siebel Institute of Brewing Technology in Chicago. He became Assistant Brewmaster in 1992 and officially took the helm as Brewmaster in 2005.

The “Original Craft” Brewery

Under Mauric’s leadership, Shiner Beer expanded its portfolio beyond the iconic Shiner Premium and Shiner Bock as the craft beer market began to grow nationally.

Current Ventures & Philosophy:

  • Pioneering the Craft Movement: Long before the “craft beer” boom, Mauric and his team were producing complex ales and utilizing techniques like “co-hopping” (dry hopping in the fermenter) with the release of Shiner Kosmos. Mauric proudly refers to Shiner as “the original craft.”

  • The “Shinerize” Quality Standard: Mauric implemented strict operational standards, insisting on using real, fresh ingredients for their seasonal beers. For products like Ruby Redbird and Prickly Pear, his team manually poured drums of real fruit juice directly into the brew house, refusing to cut corners with artificial flavors.

  • The Reluctant Marketer: As the brand expanded nationally, the marketing team leaned into Shiner’s authentic, small-town roots. Mauric became the literal face of the brand, starring in a highly successful, quirky national commercial campaign that significantly boosted brand equity and sales.

  • Distilling the Future: Before his retirement, Mauric helped conceptualize and launch Shiner’s new venture into distilled spirits, building out a program for vodka, gin, and an upcoming bourbon line utilizing the brewery’s 116-year-old malted barley and corn mash processes.
